Course of homemade ice cream
The course is made up of 50 hours of training divided into 10 meetings of 5 hours
35 hours of theory and 15 hours of practise
During the early seven meetings you will have theory in the classroom, Syllabus:
- What is the ice cream - The classification of raw materials - Ice cream substances - Complementary ingredients - Technology of the production process - Trade-off of the ingredients of the mixture - Method to balance the ingredients - Elaboration of a recipe - Percentages of raw materials - Ice cream flaws
In the following three meetings you will have the practise: - 15 hours of practise in laboratory divided into 3 meetings lasting 5 hours.
The course could be supplied also individually, establishing the time and the days of attendance at the moment of registration.
It releases certificate and manual.


Course for the preparation of the fruit sorbets
The course is made up of 30 hours of training divided into 6 meetings lasting 5 hours.
20 hours of theory and 10 hours of practise
Syllabus:
- the ingredients and their functions - standards of trade-off - the sugars in the fruit - quantity of fruit - the ph of the fruit - the sugars syrop - the alcohol in the mixture - special sorbets.
-10 hours of practise in the laboratory.
The course could be supplied also individually, establishing the time and the days of attendance at the moment of registration.
It releases certificate and manual.
Course for the preparation of the Italian semifreddo
The course is made up of 30 hours of training divided into 6 meetings lasting 5 hours
20 hours of theory and 10 hours of practise
Syllabus:
- the characteristics of the semifreddo -difference between French semifreddo and Italian one - preparation - procedure - Italian meringue - basic recipes - semifreddi creams - semifreddi fruits - semifreddi liquors.
-10 hours of practise in laboratory.
